Abstract

Basic trade and social developments have affected the application of microwave heating in Scandinavia. Its large impact upon industrial and school feeding programs and the development of high-capacity installations for food catering systems are discussed in terms of the advantages achieved by employment of this technique. Details of a study involving microwave oven customers are also given.
