Abstract

Individually quick frozen (IQF) unpitted red tart cherries were partially thawed using microwave energy, pitted, and processed into canned pie filling. The product made with these cherries was comparable with a similar product made from IQF pitted cherries. Costs from one to several cents per pound of cherries were estimated for the microwave thawing operation.
