Abstract

The United States Armed Forces’ interest in the application of microwave energy to food processing and foodservice dates back to the mid-1940's, and has continued to the present. A review of microwave related projects over the years is presented along with a discussion of two specific applications that appear to have considerable commercial/industrial potential: freeze-drying and in-pouch sterilization of foods.
