Abstract

The dielectric properties of honey-water mixture have been investigated using the time domain reflectometry (TDR) technique inn the frequency domain 10 MHz to 10 GHz at 25oC.  The dielectric spectrum of pure honey can be described by the Davidson-Cole model.  Additional of water to honey leads to a broadening of the spectrum.  The conductivity behaviour was also investigated.
