Abstract The dielectric properties of honey-water mixture have been investigated using the time domain reflectometry (TDR) technique inn the frequency domain 10 MHz to 10 GHz at 25^oC. The dielectric spectrum of pure honey can be described by the Davidson-Cole model. Additional of water to honey leads to a broadening of the spectrum.
