Abstract

The single-mode active cavity (SMAC) perturbation method was used to study the relationships between the electromagnetic properties of milk and its constituents at a temperature of 20°C and a frequency of 2450 MHz. The experimental permittivities and loss factors are comparable to reported data obtained by other methods. Contributions to the permittivity and loss factor from protein, lactose and fat in aqueous solutions have been evaluated and used to predict electromagnetic properties of milk by the Hasted-Debye model. Correction factors which adjust electromagnetic properties calculated additively from milk composition to that of natural product have been given.
