Abstract The application of microwave electronics to heating systems in the food industries represents the use of high technology products in low technology industries. This peculiar mismatch can lead to many difficulties in arriving at mutually satisfying microwave applications. The hostile environment for sophisticated electronics frequently encountered in food plants; the lack of sophisticated knowledge of processing costs; the need to design equipment for use by non technically oriented plant people, are only a few of the problems the microwave hardware manufacturer must face in creating an economically significant business within the food industry. However, the opportunities appear to be there to make the risk worth it. |
